Pájara's gastronomy is not very well known to visitors. A great variety of typical dishes made from local products such as fresh fish, goats’meat, “gofío”, tomatoes, potatoes and cheese. Also there is a new tendency to create dishes using the same local products. Fish is usually prepared parboiled, fried, grilled or split in two and grilled accompanied by a salad of majorero tomatoes and wrinkled potatoes with “mojo” sauce.

“Mojo” is a typical canarian sauce which comes in two main varieties, green and red (spicy). Parrotfish, tunas and groupers are the most popular fish eaten here, caught on our coasts and commercialized in the fish factories. Exquisite limpets and mussels with “mojo” are also very tasty. Cheese is made from goats milk giving it a soft flavour and its production by hand, together with its designation of origin show us the quality of these products.
